THE STUDY

Roast. Aroma. Bitterness. Sweetness.

Coffee and cacao share more than bitterness. Both are transformed by fermentation and roast, and both carry aroma long before sweetness enters the picture. This small collection is where I explore what happens when the two are treated as equal ingredients.

60% cacao · Milk chocolate + coffee

The aroma arrives before the first bite. Ivory Coast cacao and Peruvian coffee are refined together so the coffee becomes part of the chocolate itself — roasted, aromatic and integrated rather than added at the end.

A filled chocolate built around coffee, chocolate and liqueur — a softer, aromatic counterpoint to the bar.

Same conversation, different texture.
